Are you ready for my secret recipe...
Your Favorite Flavor Cake Mix
(I used Duncan Hines French Vanilla and Rich Fudgy Chocolate)
Box of Instant Pudding (same flavor as the cake mix)
Eggs your mix calls for + 1 additional egg
Double the amount of oil, but use melted unsalted butter (the real thing not margarine)
Use milk in place of the water your mix calls for and add 1/4 cup
I use a fork to slightly beat my eggs before placing them in the mixing bowl, and mix the wet ingredients together for a minute or so before adding the dry ingredients. Be sure to let your melted butter cool before adding it to the eggs (you don't want scrambled eggs in your cake). Don 't over mix after adding the dry ingredients, it will make your cupcakes tough. This mix is thicker than when you use the recipe on the box, I scoop mine into the cupcake wrappers using an ice cream scoop. I had to bake mine approximately 18 minutes.
These cupcakes are so moist and delicious!! Give this a try the next time you make cupcakes or a cake - it would be perfect for decorating!!
